One-pot Chicken and Potato is a delicious meal to prepare that will leave you licking your fingers. This new food hack will amaze you. This is just no ordinary recipe where you throw down potatoes in boiled chicken. We are far better than that. Marinated chicken alongside a few vegetables has proven a new hack to enjoying the whole combination infused with the same level of spice. In this quick recipe of one-pot chicken and potatoes, prepare your ingredients below:
- 1 medium carrot (diced)
- Chicken pieces (cubed in small pieces)
- 2 Jalapeno chili or normal fresh chili (thinly diced) (optional)
- 1 green bell pepper (diced in big pieces)
- 1 red bell pepper (diced in big pieces)
- 1 onion (diced in big pieces)
- 4 cloves of garlic (minced)
- 1 tbsp oil
- 4 sprigs of fresh thyme (thinly chopped)
- 2 tsp seasoning powder
- 1 tsp salt
- 2 tsp paprika
- 1/4 soy sauce
- 1 tbsp hot and sweet sauce
- 2 large potatoes (skinned and diced into small pieces)
- 1 tsp salt
- 1 tsp butter
How to prepare:
Get a bowl where you shall marinate the chicken and the vegetables. Add in the chicken, carrots, chilies, bell peppers, onions, garlic, sprinkle in some oil, thyme leaves, chicken seasoning cube, salt, paprika, soy sauce, chili sauce (again optional), and a bit of cayenne pepper to add heat to the dish. With clean hands, dive in, and mix these ingredients. The aroma from the marinated chicken is enough to drool over, but it will need a little patience from you. Leave it to marinate for two hours. Leave it for longer if you have kienyeji chicken.
Let’s move to the potatoes as the chicken is marinating. On a saucepan, we parboil (half-cook) the potatoes for about 6 minutes. Add in salt and butter. The water can be more than the potatoes while boiling, that is if you are sure to save it up as a vegetable stock for dainty recipes of soup or more. Remove from the heat, drain the water in a bowl and let the potatoes cool in the open.
Back to our chicken-vegetable marinade. The heart of this dish. On a saucepan, we will shallow fry the chicken first. Make sure it is cooked and all the sauce is well infused. The marinating process has made our chicken flavourful and tender. By using garlic, chilies, onions, and oil, which controls the marinade from over-tenderizing the chicken, our meat is easy to cook. Shallow fry it in some oil. Cook each side for at least 3 minutes as you turn them. Add in the marinated vegetables with all its juice. Rinse the bowl with some water and pour it in too. Mix them all for about a min. Go in with the potatoes and give it one last swirl to combine. Add two tablespoon of water and let it sit for fifteen minutes under low heat to simmer. Ensure your potatoes are cooked through before turning off the heat.
