4 cloves Garlic Finely chopped
1 cup Dhania Finely chopped
4 tbsp Lemon juice
1/4 tsp Seasoning

Classic tomato salsa

    No canned tomatoes, no food processor. Just fresh tomatoes in a classic dip

    In a bowl, mix your vegetables; 4 tomatoes, onions, garlic, jalapeno, lemon juice, dhania and seasonings. Toss until everything is well combined. Refrigerate to cool it down.

    For a more chilly flavour, roast 2 chillies in a non-stick pan. Include 4 whole tomatoes for roasting so we can get that smoky flavour in the salsa. Remove the chillies after a min, or until they turn lightly black. Continue with the tomatoes as you turn so all the sides get to roast. Remove from the pan and blend it, with the chillies until smooth. You can even mash it in a pestle and mortar and remove the skin. Crush the chillies to small flakes. Deseed your chillies for a less hot salsa or include it if you can manage the heat.

    Add your blended tomatoes and chilli to the mixed vegetable bowl. Stir. Taste and adjust the seasoning of the lemon, or salt.

    Note: The lime helps to preserve the salsa for a long. Store the salsa in a tight glass jar, removing the amount you want to use at the moment. When the jar is opened, refrigerator the salsa to last for long.
