1 kg Irish potatoes
1/4 kg Green peas
1/4 kg Soft Maize
2 bunches Spinach
2 Serving spoons Vegetable oil
To taste Salt
2 cloves Garlic
1 large Onion
4 glasses Water

    Kenyan Mukimo is a common food especially among the Kikuyu. Mukimo can be served with different stews like wet fry beef, dry fry beef, dry fry pork, wet fry pork, fish, omena, eggs, spinach, kales ,mushroom and a cold smoothie

    Steps

    Peel the Irish potatoes, cut them into halves and wash them.

    Boil the potatoes for about 20 minutes.

    In a separate sufuria boil the soft maize and green peas for about 15 minutes.

    Mix the potatoes with maize and green peas then mush them together using a sturdy wooden spoon.

    Wash the spinach and cut them into small pieces then blend. You could use pumpkin leaves in place of spinach.

    Add the blended spinach to your mashed potatoes, maize and green peas.

    Set your cooking pan on heat, then add Vegetable Oil and salt.

    Add garlic with onions to your pan and stir until golden brown.

    Add your mashed mukimo and stir to ensure well mixing of ingredients then allow to simmer for 3 minutes.

    Serve while hot with a stew.
