680g (2 large sized) Sweet Potato skinned and diced into small cubes
3 Carrots skinned and diced in small cubes
1 Yellow onion diced into small cubes
1 tbsp Ginger peeled and finely diced
4 tbsp Olive oil
2 cloves Garlic minced
1/4 tsp Paprika
1/4 tsp Red pepper flakes
4 cups Vegetable stock

    When you love sweet potatoes, discovering this recipe is magic. Sweet potato soup is rich in taste, as they have a sweet flavor, blending it with spices brings out a hearty and warm soup.

    Heat a pot on medium heat with olive oil, add in the diced onions and carrots. Stir as they cook for about 8 mins. Add ginger and crushed garlic to the mixture. Flavor with paprika and red pepper flakes then stir for about 3 mins.

    Our base sauce is ready, add in the diced sweet potatoes, go in with the vegetable stock then give it one last stir as you let it cook. If you do not have enough stock, add hot water with a vegetable bouillon cube to match the flavor. Turn the heat to high, let it boil for a few minutes then low heat. Let it cook in your tightly covered pot for 20 mins, and until the sweet potatoes are fork-tender.

    Remove the pot from heat. In a blender jug, transfer the sweet potato contents and the liquid. Close tightly then blend on high for 2 mins. And more vegetable stock or water if the soup is too thick. You can use a stick blender to smoothen the soup if preferred. Serve in a bowl, add some parsley topping and coconut milk.
